Mayonnaise

Ingredients

1 egg

1 pt. salad oil

juice of 1 lemon

1 t. salt

1/4 t. powdered mustard

dash paprika

Directions

Have all ingredients at room temperature.
Add salt, mustard, and paprika to egg, beat.
Then add oil slowly while beating constantly.
Add lemon juice, beating until well mixed.
If desired, a small amount of vinegar may be added in addition to lemon juice.

Notes

We never had store-bought mayonnaise growing up. Therefore, I could never acquire a taste for mayonnaise bought at the grocery store. When I set up housekeeping, I continued to make the mayonnaise (even with 5 children under foot).
